Avocado Bean Salad

This is a very tasty yet simple recipe that is also good for you!

Ingredients: 

Cherry Tomatoes. As many as you want, sliced in half

1-15oz. can  Black Beans (rinsed and drained)

1-15oz can  Red Kidney Beans (rinsed and drained)

1-15oz can  Garbanzo Beans (chickpeas)(rinsed and drained)

2- Large Avocado’s

2- Cloves Garlic – Minced

Bunch of fresh Cilantro -chopped

1-Lime

1/2 Cup to 1 Cup of Extra Virgin Olive Oil

Pepper to taste.

Salt if you choose. 

Directions: 

Mix your beans, tomatoes, garlic, Cilantro, Olive oil, Salt and Pepper together in a large bowl. ( I chose not to use salt to make this heart healthy)

– Scoop out avocado’s, slice and place in another bowl 

-Sprinkle with Lyme Juice to keep from browning. 

– Add Avocado’s to your bean mixture, mix well and let sit in the refrigerator for an hour or more. 

-Enjoy!
