I made these for Lou and he really liked them. I hope you enjoy them too!
2 – 5 ounce cans of Chunk Light or Albacore White Tuna in Water, drained
2 Tbsp. Low – Fat Mayonnaise
1 1/2 Tbsp. Chopped Red Onions or Scallions
1/2 Tsp Dried Dill (I skipped the dill because Lou doesn’t like dill)
1 Tsp. Lemon Juice
4 Slices Whole Wheat Bread
2 Medium Tomatoes, Sliced
1/2 Cup Shredded Reduced Fat or Low Fat Cheddar Cheese
Turn on oven broiler
Mix all ingredients together in a bowl. Except the cheese.
Use non Stick Spray or Non Stick Aluminum Foil and spray or line a baking pan. ( I used the bottom half of my broiler pan lined with non-stick foil)
Place Wheat Bread on Pan and place a good amount of Tuna on each slice, spreading it out on the bread and slightly pack it down in place.
Place tuna on bread under the broiler for about 1 or 2 minutes to heat up.
Remove from broiler and then place tomato slices on each piece of bread and top with shredded cheddar.
Place back under the oven broiler long enough for the cheese to melt.
Serve immediately with a side of your choice.
