Penne, Tomato & Mozzarella Salad

I made this dish last night and it came out excellent.. I made mine hot but I am sure you could even serve this cold if you like.. So onto the recipe..

1- 12 Ounce package Penne Pasta ( I didn’t measure it out, I just used as much as I wanted.)
1/4 cup Olive Oil (once again I didn’t measure it I just used my eye)
1 Bunch Green Onions, chopped. (I didn’t have green onions so I just used a 1/2 of a sweet onion)
1 Clove Garlic, Minced. ( I cheated as you’ll see in this photo)
1 Cup Cherry Tomatoes, quartered
5 ounces Mozzarella Cheese, diced (once again I just eyeballed it)
1/2 cup Grated Parmesan Cheese (yep, I eyeballed it..Sorry learned to cook from my mom .. LOL)
4 Ounces Fresh Basil ( again, I cheated)
12 Large Black Olives, halved (I used more because I love black olives)
Directions:
Cook Pasta in a large pot of boiling salted water as directed on package, until just tender. Drain and set aside. 
Heat Olive Oil in a sauce pan. Add onions and cook, stirring occasionally, 2 or 3 minutes. Stir in garlic, and cook for 2 minutes. Add pasta, tomatoes.

 Cook over low heat to warm through. Stir in mozzarella and Parmesan cheese. Add in basil (if using fresh leaves cut them in halves or thirds), add in olives and serve immediately.

  1. That looks major good! I am also one who doesn't measure things. If its crucial in a recipe, then I do measure. I am so good at just eyeballing it that I can't see dirtying up every measuring cup or spoon in the house to make one thing!It helps for you to be up and around doing these kinds of things. Feeds the soul as well as the tummy!

  3. Hi Robyn! Thanks for leaving such a warm and comforting comment on my blog. I also suffered from some digestive issues when I had my gallbladder removed, almost 6 years ago. Thankfully, time healed the problem but every once in a while it spikes up. I'm a new follower now and also highlighted your blog on facebook….sending you my friendship and hugs!!
